Nuvola was born from the dream of Fatjon, a pizzaiolo who honed his craft in Naples before moving to London in 2018. After years of experience in traditional Neapolitan pizzerias, he decided to bring an authentic yet innovative pizza experience to the heart of the city.
The name Nuvola (Italian for "cloud") reflects their philosophy: a light, soft, and highly digestible dough that feels like a cloud with every bite. Nuvola use the biga method, an evolution of sourdough, perfected through countless trials until they achieved the ideal balance of fragrance, texture, and flavour.
Every pizza at Nuvola is crafted with care, from the long fermentation of the dough to the selection of fresh, high-quality ingredients. Their goal is not just to serve pizza, but to share the warmth, conviviality and lightness of the true Neapolitan tradition.
